The Blomberg family is over at the house as well as Jon. I decided I should try to be more hospitable so I made some pumpkin cream sandwich cookies.

Found a great (and super easy) recipe for Strawberry Rhubarb Jam here. It is so great and so super easy that this is my second batch in a four hour period. Yum yum!

I Am in Love

What can I say? I love peanut butter. I could eat it for every meal. Seriously. Love it, love it, love it!

So once I heard we had some company coming into town I decided to make, of course, peanut butter pie! An incredibly easy recipe and an incredibly great dessert. I suppose you could make it even better by drizzling chocolate over the top if you are into that kind of thing. I however will take mine chocolate free but might consider a little caramel or butterscotch. Mmm, peanut butter. Let's hope I can wait until our company arrives before enjoying a piece!

Hosted a baby shower today for a friend.

I will be honest - I get pretty excited about creating things and planning a party. When she told us that she was decorating the room in a bug theme, I couldn't wait to throw her a bee themed party. With the help of some lovely ladies, we had a great time (and the little man was very excited to see bugs in the house)!

Meals for a month that is....
I have no idea what our life will be like when we return from our 20+ hour day of flying with a two year old in tow. I figured the last thing I would want to do is cook.

Thankfully, I have an amazing friend (Lisa) and you should all have a friend like her. I would not have, and I repeat WOULD NOT have made it through the last six weeks without her. She not only scrubbed my house from top to bottom, but she helped me put together a menu, grocery shop and then cook 5 hours to make 20 some meals. She is amazing!

Summer Eats

When I think about summer, one thing that always, always comes to my mind is strawberry rhubarb pie.  I love strawberry rhubarb pie. As a matter of fact, I think that everyone should love it.  To me it is the perfect combination and I can't think of a better pie that exists.  

I don't love being in the kitchen, but when it comes to making this pie.... I get lost in the joy of knowing that when the timer goes off, I will be able to indulge in this tasty treat. I often times can't resist scooping up a forkful and shoveling it into my mouth with reckless abandon, even when it has only been out of the oven for five minutes. 

As described by another pie lover, "These two contrasting specimens complement each other so well when baked together that it makes you believe that there's order in the universe, that there must be some guiding force who planted strawberries in one patch, rhubarb in another and gleefully put his or her hands behind his or her back and hoped that humans would figure it out." The rhubarb, with its extreme tartness and flavor, is slightly concealed by the sweet strawberries and buttery, flaky crust.  It is amazingly delicious! My stomach is craving a piece right now! So until next time, be well, and know that we will try to save a piece of strawberry rhubarb pie, but there are no guarantees!
